Day 23
Today we got TWO more interns! Wahoo!
I sauntered around feeling somewhat arrogant and telling the interns what’s what. Dara told me that I’m “getting good” and that she appreciated me cracking on with jobs. Get in!
I developed a new emulsion theory over the weekend having done a fair amount of research. The recipe combines cotija cheese, champagne vinegar, coriander/cilantro and olive oil. So the protein in the cotija cheese is apparently the emulsifier – and the older the cheese, the more protein it has. Blah blah blah. I don’t fully understand but I decided to add a bit less oil today which seemed to work. An unsplit emulsion.
The day carried on and the kitchen felt full!
Our mate Marvin the dishwasher came along mid morning and I immediately asked him if he was “prometido” (engaged). He said he did the deed yesterday. He bought her flowers and hired a band – not to mention the big ol’ rock that he bought her. What a little lad. I got so excited for him. He’s getting married in March if you can believe it.
And then the electricity went out.
For well over an hour we stumbled around with no lights, ovens or fridges. We were instructed to unplug everything for fear of a power surge when things did come back to life.
We managed to finish off all our prep in the dark of the day. No extraction fans either, so when someone went to close our exterior door, we all started choking with coughs! I can only imagine what it was like down stairs.
Luckily we got power again around 5.30pm and finished all our vacuum packing followed by trout pin boning.
I managed to lose (?) my flat keys and spent over an hour trying to pick the lock before realising the window was open and crawling through!
I am officially knackered! Looking at only 5 hours sleep isn’t terribly exciting. Time for bed.
