Today started off really strong. We flew through our list and I was doing emulsions like an expert (finally) and cranking out mayos with Dara smashing through of the list like a little machine. Lots of singing, music and a bit of early morning chatter. I bought coffee and croissants for everyone which seemed to go down well.
Every morning around 8am (honestly I have very little idea of when it really is as this place makes me lose all sense of time), someone shouts “llevo Gio” (“Gio arrived”) and we all file downstairs to the street to meet Gio who brings all our spectacular fruit and veg delivery. We carry the cactus leaves, amazing oranges etc etc etc up to the first floor for inventory. One of my favourites to arrive is the lima that we squeeze every morning – which is somewhere between a lemon and a lime in look (side note: limes are called “limon” in Spanish – much to my confusion and head banging frustration) with a slightly sweet taste and bergamot flavour. The fragrance coming fromm our industrial size (yet still hand operated) juicers fills the air as I squeeze the limas one by one.
I’ve now got into a rhythm of my morning tasks. We have a long list to complete before our daily briefing at 12.30. We normally have a crunch in late morning where we have to haul ass to make sure we’re not “en la mierda” (in the shit)… which we seem to be in a lot this week.
Today I seem to have properly cracked tamales… fingers crossed.
Dinner brings a lighter atmosphere generally although not tonight where everyone seemed a bit tired and down.
Tomorrow when I am properly en la mierda as Dara has a day off and I get to look after cold prep on my own. Luckily Dara has prepped as much as possible today so I can try to stay out of the shit tomorrow… I’m hoping the others will help me out of any shit that starts rising.
I have checked with Lara to see if the other’s are annoyed at having to help me tomorrow and she’s said no… fingers crossed.
